Salty sweet potato pancake
Ingredients:
- 2 eggs
- 50g cooked sweet potato
- salt
- 3 tablespoons quinoa
- 1 sliced chicken breast
Method to prepare the quinoa:
- Boil 2 + 1/2 cup (600ml) water for 1 + 1/4 cup (210g) quinoa. As soon as the water starts to boil add the quinoa and cook for 12 to 15min.
Method to prepare the pancake:
- Beat all the ingredients, except for the quinoa and the chicken breast, on the blender.
- Add the quinoa and mix with a spoon.
- In a frying pan whit a little bit of oil, add part of the mixture, and grill it both sides. Repeat the process with the rest of the mixture.
- Fill it with chicken.
