Curry potato and broccoli


Ingredients:

- 700g potato
- 500g broccoli
- 1 onion
- 2 tablespoons oil
- 400ml coconut milk
- 300ml homemade vegetable broth (recipe below)
- 1 tablespoon red curry paste
- 100g red lentil
- salt

Method:

- Wash, peel and cut the potatoes. Put it in a bowl with water, so that they won´t get dark.
- Wash and cut the broccoli.
- Peel and cut the onion into small pieces.
- In a pan, heat the oil and add the onion and the potato.
- Add the curry paste, the coconut milk and the vegetable broth. Cook it for about 10min.
- Add the broccoli and the lentils. Cook it for 10min more.
- Add salt.

Vegetable broth recipe:

Ingredients:

- 2 carrots
- 2 stalks of celery
- 1 big onion
- 2L water
- 2 bay leaves

Method:

- Wash the vegetables.
- Peel the onion and cut it into 4 slices. Cut the carrot into thick slices. Cut the celery in pieces of about 5cm.
- In a pan, add all of the ingredients and cook in high temperature. When the water starts boiling, turn the heat down and let it cook for about 30min. Do not add salt! Just add it when you´re preparing the meal.
- Turn the heat off. Leach the broth.
You can keep it on the fridge for 5 days, or in the freezer for 3 months (freeze it in ice mold to make the defrosting process easier).
